Critical Health Violations: Inspector discarded molded lemons; dirty drain in backroom handsink; food not held at proper temperature in cooling unit; no replacement schedule for dishes that are cracked, broken or chipped

Other Inspector Observations: Wiping cloth not in sanitizer bucket; dirty trash containers; dirty walls in dry storage areas

Month: January

Critical Health Violations: Customer complained he found piece of fiber (possibly cotton) in sandwich. Restaurant replaced sandwich. Manager told inspector that she had replaced sandwich, but did not observe fiber. She believed it might have been paper towel fiber. Inspector closed complaint without further evidence.
